Love the sound of the chocolate sorbet with raspberry coulis! Might do it. The update: it is SO good. I do want to try reducing the sugar a bit more but I recognize that might make it a bit darker and more bitter which I personally like, but my family (and others who might make it) preferred it as is. It was SO smooth though, even after a few days of freezing so we're spot on in terms of texture!
