This week I’m straddling the line between cool and warm weather recipes: the new is chocolate (stuff I’ve been holding onto since february!) but I also have some bright, happy citrus recommendations for these lovely mid-spring days.

Double Chocolate Frosted Cookies
Soft chocolate sugar cookies topped with chocolate frosting. Frosting can either be cocoa based or melted chocolate - your choice!

Lemon Sugar Cookies (sans raspberry)
The base recipe for this was the Lemon Sugar cookies with raspberry frosting (linked in the title and photo) but instead of raspberry I just made a vanilla buttercream and dyed it blue. The flowers on top are chamomile =)

Orange Creamsicle Ice Cream (no churn)
Easy pure vanilla no churn ice cream (you can do it by hand but it’s quicker with a hand mixer) flavored with orange zest and layered with orange curd. yes we are making the curd from scratch and yes it’s so bright and happy!

“These are quite possibly the best cookies I’ve ever had. I used your lemon curd and it was fantastic. I will make these again and again.. and try all the variations. I think I found it easiest to shape the dough into bowls and fill them vs using the frozen discs of curd, but either way works.” - Keli

This week has been a bit of a baking dud for me, on Tuesday I came down with something icky and I haven’t quite managed to get back into the kitchen much. Instead, I’ve made do by editing videos, writing, and planning for the coming months… what do we want to see this summer? Fruit bakes? Ice creams? How many of you have an ice cream machine? We found rhubarb at the store! Truthfully, I am not a fan of the stringy texture but I do love the flavor and it makes for such pretty bakes (I always think of Thida Bevington’s tart when I want to do something visually creative with rhubarb) so I’m excited to play with it. Plus this means our local, farm fresh strawberries are right around the corner! =)

Chocolate Custard Pots, for Two
Thick and creamy chocolate custard, sans cornstarch. Made with dutch cocoa and dark chocolate and paired with brown butter, these are wonderfully rich. The little bits of brown butter give the pots a bit more texture and a lovely depth of flavor.
