I saved some super special recipes to celebrate the start of summer and end of the school year… already another one gone by!

Baklava Cheesecake (No Bake)

Caveat: you will have to turn on the oven for the baklava. BUT, oh but, let me tell you this is one of the most special bakes you’ll ever make (idk maybe I’ve peaked here) because the baklava is baked, then doused in syrup like a traditional baklava, and then a no bake cheesecake is whipped up and set in the center. Unlike my original baklava cheesecake, this one has a proper baklava crust. It’s a bit of work, but it’s so worth it.

Strawberry Rolls

Strawberries are slow roasted to intensify their sugars and flavor, they get mixed with white chocolate and slathered as a filling between the fluffiest milk bread rolls. Plus, a true strawberry glaze on top.

my girls LOVE these: you make them in a muffin tin, adding chocolate as a first layer, then ice cream, then chocolate on top - you set the stick in and it’s like a delicious chocolate ice cream bar but no special molding tools needed.

  • I saw a gal on TikTok make jam out of some fresh berries that had gone soft and she called them ‘elderberries’ (not the ones from the sambucas tree - just, old berries) and that’s it, that’s the name we all need to adopt. Anytime you see me cooking down fruit, it’s ‘elderberries’ that I’m using. I just think ‘youngerberries’ are best eaten fresh.

  • If you’ve left a review recently on the site (thank you!) you may have noticed that there’s been a change you are asked to leave you name and email. I was told by a friend, who is much more connected to the food blogger scene than I am, that there has been a debate going on bts about whether this should be the case. Honestly? I do like seeing your names rather than just a rating because I get to know a bit about the person who has made and enjoyed it. Sometimes people leave informative comments and give tips that are helpful for others (and me!). But this also means that in order for mrs. google to recognize a good recipe, more people have to be willing to put in that information - especially now that we are starting to go to bat with AI generated recipes. So once again, here’s me in my broken record voice saying, please leave a review. And remember, it doesn’t at all have to be lengthy, even if you just say ‘so good’; I’m good and happy.
