Pumpkin Meringue Cake with Apple Pie Filling
Oh boy, isn’t she grand? This is probably one of the coolest things I’ve baked this fall: a soft and moist pumpkin cake layered with apple pie filling and topped with a spiced meringue. The apples are pre-cooked (just a bit) then baked in between two layers of cake batter. Once the cake is cool, we’ll make a swiss meringue with some brown sugar, whip it to stiff peaks, spice it and then torch it over the cake.
