For ‘galentines’ day I’d planned to send treats to school with my daughters for their teachers. I often make this gf/df/eggfree ccc recipe for one of them and figured I’d just make extra for the others, but I ran out of vegan butter and chocolate. I scoured my site to see what else I could do, and ended up making these shortbreads (which luckily are also dairy & egg free). I put the cookies in some little v-day themed treat boxes from target and guys - the result was these adorable lasso-like shortbreads! Score! ;-)
I have been working with breads a lot lately, a discard pita recipe (which I am stoked for!), some overnight english muffins (tbh I’ve been fiddling with that one on and off for a year now and still not 100% satisfied) and a cheesy flatbread (discard also, amazingly fluffy). I’m considering scattering them throughout the year or doing a full month dedicated to bread recipes - we’ll see. In the meantime, there’s about to be lots of lemon content coming your way. Blame spring not me! ;p
