Cranberry Blueberry Meringue Pie
“Made this between yesterday and today for a Thanksgiving celebration. The meringue is absolutely delightful. Hubby and I would eat it with a spoon. I could not find freeze dried blueberries anywhere local, and didn’t want to buy an expensive bag for two tbsps just for this recipe, so instead I used (gasp!) red food coloring. It came out a delightful pink. Some day when I’m near a Trader Joe’s I’ll probably stock up on blueberries, but until then, we are quite happy!” - Vanessa

Although I’ve overloaded us this week, it’s likely not the last you’ll see of cranberries this year. What do we think of some cranberry stuffed cookies? Or some cranberry rolls? I’m thinking to do another cran week sometime in December =)
I promised you apple curd awhile ago but guys, it’s not happening. I made it 6-7 times and only once did it turn out just right. It’s a finicky one, turning out either too watery or the eggs are making it, err too eggy. It’ll be on the list for next year. 🤞

Ahhhh this is one of the most delicious things I’ve made in a hot minute. The curd is just perfectly tart and smooth, the meringue blissfully tastes nothing like a regular meringue, it’s tart and berry-flavored and because it’s an Italian meringue, it’s soooo fluffy and silky.
