Brown Butter Peanut Butter & Chocolate Ganache Stacked Cake
and olive oil chocolate chip cookies !
After a month of citrus (mostly lemon really =p), this week we’re putting down the zester, sitting back and enjoying some warm, melty chocolate.

Three Yolk Brown Butter Chocolate Chip Cookies
An old favorite; my egg yolk chocolate chip cookies but this time with butter that’s been cooked until the milk solids toast. Gives these cookies a toffee like flavor all around.

“These are absolutely phenomenal. I’ve made many brownie recipes but these are by far the best! I highly recommend using Trader Joe’s cinnamon graham crackers for the crust. The marshmallow is delicious but they are still great without any topping at all. Don’t rush these – the cooling process is necessary for it to reach the perfect brownie texture.” - Alissa

“For me and the Palestinians of Gaza, tunnels have become something of an essential infrastructure. In 2007, Israel imposed a debilitating siege on Gaza, and as an occupying power, it has been able to fully control what can come through border crossings, including the one with Egypt at Rafah. Throughout the past 16 years, the Israeli authorities have decided arbitrarily to ban certain goods from entering the strip as yet another form of collective punishment of its population. For example, in 2009, they decided that no pasta could enter Gaza. Yes, pasta.” What Tunnels and Hostages Mean in Gaza, Al Jazeera.
“ “…with every cup of morning Joe, it’s the dairy industry Americans are bailing out. Just how much the federal government — and taxpayers by extension — subsidize the industry is a little-known fact, and its implications are mind-boggling.” By keeping dairy prices artificially low, demand for dairy increases while smaller producers deal with higher production costs and lower demand….These subsidies also incentivize overproduction. So much so that there is currently over 1 billion pounds of cheese and millions of pounds of butter stored underground in Missouri. But the excess doesn’t stop there: Each year, millions of gallons of milk are dumped on fields or sent down drains.” Is Charging More for Oat Milk Discriminatory? Eater.
“Customers of Trader Joe’s would have serious problems with a company that has rejected the New Deal.” ... It’s not unusual for an employer to seek to destroy a nascent union effort, but why get so far out in front and risk inciting backlash from your customers? The answer is simple: the (National Labor Relations Act) stands in Trader Joe’s way. For evidence, just review the board’s rulings in cases between Trader Joe’s and (Trader Joe’s United) since the union drive launched two years ago.” Trader Joes Rejects the New Deal, Jacobin.
I’m surrounded by colorful tulips and bright daffodils blooming in my yard and it has sent me on a bit of an orange kick this week - I don’t know, maybe I’m getting mother’s day feels? (I plan everything at least a month in advance so my mind is already in May ;p). As a result we’ll return to citrus in a few weeks: a bundt cake (for substack) and some sugar cookies (for the blog) are coming to you soon =) But before then, there’s more chocolate and cookies on the way.
Bakes I wanted to bring to your attention with next week’s dates in mind: for Eid you’ll love this Baklava Cheesecake; if you’re making an event out of the upcoming solar eclipse, this ‘moonbow bundt cake’; and lastly, April 9 is ‘national unicorn day’ and if your littles are like mine and insist on celebrating, here’s a glitter dusted, unicorn swirled no-bake cheesecake they’d love.
A big, huge thank you to all of you who left reviews on my site over the easter weekend - I was away (visiting cherry blossoms!) and when I came back to some +10 reviews it really made my weekend ❤️ Reviews help raise a recipe’s profile on google search results so if you like a recipe and think others would too, please leave one (even if it’s super short!)
