Brown Butter Ginger Molasses Cookies
Shortly after I had my first, some friends brought me a bag of TJ’s ginger molasses. I’d never enjoyed a bag of cookies as I did that day. TJ’s stopped selling them the year after and I have been dreaming about them since. I’ve tried so many recipes but never quite felt that same satisfaction for a cookie that was completely chewy all over but had that signature ‘bite’ of spice from ginger. So, I created this classic cookie in a not so classic way - and they’re amazing. I implore you to try them.

Chocolate Peanut Butter Pie
“I made this pie for someone for Thanksgiving and it was SO good! What a classy and elevated version of my least favorite dessert (chocolate pie). I didn’t have a tart pan so I used a standard 9-inch pie pan and it worked great! I just couldn’t fit all of the filling since the pan wasn’t as deep. But that’s ok because I layered the ganache and peanut butter whip and we ate it as a dessert dip with various holiday cookies! If anything, I’ll probably make the filling a hundred times over as a fun holiday treat. Great recipe!” - Courtney

I’m in the WashPo! The publication does a holiday cookie special every year and I was lucky enough to be asked to submit a recipe for 2023. After going over several ideas (at least a few had curd in them, you know me lol) we settled on these: a brown butter pistachio shortbread with a pomegranate glaze. Last year I was lucky enough to be on the receiving end of a cookie exchange that had Anita of Wild Thistle Kitchen sending me a batch of her Gingerbread Caramel Thumbprint Cookies . They were soooo good, highly recommend for your cookie boxes/trading.

NYT also published their holiday cookie special and there' is one that has caught my eye: Samantha Seneviratne’s Technicolor Cookies. I just know my rainbow obsessed girls would love the colors so those are going to happen asap.
