Soft & Chewy Apple Cookies
I am a little bit obsessed with the cookies you see below (caramel apple) and I wanted to recreate them but without the caramel and without the oats and just let an apple flavor come through in a slightly soft, mostly chewy cookie.

Checklist: egg yolks, oats, brown sugar, freeze dried apples, cinnamon, caramel! I mean, a cookie doesn’t get chewier than this. It’s a cross between an oatmeal cookie and a caramel apple and it’s just the best cookie.

Brown Butter Scones
Flaky and moist scones made with brown butter. Stuff the scones with bits of fruit or with chocolate chips. Make a little extra brown butter for a bb glaze, it’ll be divine.

Scone talk: two bakers you should check out if you are a scone person. Thida Bevington (whose layered scones inspired by ‘babka scones’) and Anita who recently published a chocolate scone recipe that I’ve been meaning to try and has a pumpkin scone recipe that I have made and loved (when she first published it, I layered it with chocolate like my babka scones!).
